Here are five simple tests you can do in your own kitchen.
These tests are meant to help you spot obvious adulteration at home. For a definitive check, an accredited food-testing lab is always the most reliable option.
01The Palm Test
Take about half a teaspoon of ghee and place it on your palm. Pure ghee melts almost immediately from your body heat alone, spreading smoothly with no grainy residue. If it takes a while to melt or leaves a waxy film, that's worth a closer look.
02The Melting & Aroma Test
Melt a spoonful of ghee in a pan on low heat. Pure ghee melts quickly, turns a clear golden colour, and releases a rich, nutty aroma. Adulterated ghee often melts unevenly, stays cloudy, or smells faintly sour, waxy, or "off."
03The Refrigerator Test
Refrigerate a small amount of ghee for a couple of hours. Pure ghee sets into a uniform, fine-grained texture throughout. If you notice distinct layers forming, or a texture that looks patchy rather than even, it's a sign something else has been mixed in.
04The Iodine Test
This is a well-known test for starch adulteration. Melt a spoon of ghee and let it cool slightly, then add two drops of iodine tincture (available at any pharmacy). If the ghee turns blue or purple, it likely contains starch. Pure ghee shows no colour change at all.
05The Taste & Mouthfeel Test
Finally, trust your senses. Pure ghee has a clean, slightly sweet, nutty taste with a smooth mouthfeel that doesn't linger unpleasantly. A greasy aftertaste, blandness, or any chemical note is a red flag.
